Fettuccini Paprikash
Suit your preference of hot or sweet paprika in this recipe. Reduced-fat sour cream adds a wonderful creamy texture and richness to the sauce. Serve over any kind of pasta.
Ingredients: Serves 6

medium green bell pepper, sliced |
| 1 |
large onion, sliced |
| 1 |
tablespoon of margarine |
| 2 |
tablespoons flour |
| 1 |
tablespoon sweet Hungarian paprika |
| 1/2 |
teaspoon salt |
| 1/4 |
teaspoon pepper |
| 1 |
can (8 ounces) reduced-sodium tomato sauce |
| 1/2 |
cup reduced-sodium fat-free chicken broth |
| 1/2 |
cup dry white wine or chick broth |
| 1/2 |
cup Reduced-fat sour cream |
| 12 |
ounces Fettuccini, cooked warm |

- Cook bell peppers and onion in margarine in large skillet over medium heat until peppers are very soft, 10 to 15 minutes.
Stir in flour, paprika, salt, and pepper; cook 1 to 2 minutes, stirring occasionally.
- Stir in tomato sauce, chicken broth, and wine; heat to boiling.
Reduce heat and simmer, uncovered, until sauce is thickened, 5 to 7 minutes; stir in sour cream. Serve over Fettuccini. |
